Panko Honey Dijon Chicken

I love to use Panko Breadcrumbs on everything that requires breadcrumbs. I've made this chicken dish many times and I never get sick of it. It's loaded with flavor! I like to eat it with a salad. Today the salad i'm making is a strawberry, feta,almond, &  lemon-poppy-seed mixed green. Sounds amazeballs right?! ok here ya go!





Ingredients:

1 cup Panko
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1/2 teaspoon pepper
1 teaspoon sea salt
3 tablespoons melted butter
1/4 cup dijon mustard
1 tablespoon honey
3 chicken breasts (cut in half and pounded thinner) 

Preheat 400
Mix all dry ingredients in a medium bowl and mix all liquid ingredients in a medium bowl. 
Dip chicken in honey mustard mix and then in Panko mix.
Bake in dish for 25-30 minutes. 

Serve on the side with the salad. 

Note: the dressing I use is fat-free poppy-seed dressing. With no high fructose corn syrup.  We need to watch out for high fructose corn syrup. It is a man made product that's in a wide range of processed foods. It was introduced about 30 years ago and has been a proven study to why obesity has sky rocketed. Make sure you read your labels and educate yourself on what you are putting into your body.
