Cheesy Sour Cream Hash-brown Casserole

I think I have found a new holiday tradition meal! I made this Christmas morning and we ate it for breakfast with our coffee, for lunch and as a savory side with dinner. It is that yummy! It's a simple dish, which I love because once you know it you can whip it together without measuring anything and you can change it up as much as you would like by adding veggies and trying it with different cheeses. So make it your own recipe! But here's a start:



Ingredients:
28oz bag of frozen hash browns
1/2 diced onion
1 stick of butter 
1 can of condensed cream of chicken soup
1 1/2 - 2 cups of sour cream 
2 cups of cheese (I used Cheddar Jack) 
S&P 

Preheat oven to 350
Spray 9 x 13 baking dish 
Cream together butter, cream of chicken, sour cream, onion and cheese.
Heat hash browns a couple minutes in the microwave then add to the mix. 
Scoop into baking dish and sprinkle with S&P.
Bake uncovered for 40 minutes. 
It should be golden and creamy.
