Broccoli Cheddar Soup

Soup is so much better made from scratch isn't it? Soup is one of my favorite things to make in fall and winter because it warms you up, it's easy and there's always left overs. I cut this recipe in half and it serves about 4 people. 


Ingredients

2-3 broccoli florets 
1/2 diced onion
1/4 butter (1/2 a stick)
1/6 flour
2 cups almond milk or milk
1 cup half and half 
1 cup chicken broth 
2 cups cheddar cheese 
S&P to taste
Dash of garlic salt 
Dash of nutmeg (optional)

Melt butter in large pot
Sauté onion till golden brown. About 5 minutes
Whisk in flour and cook for another minute
Whisk in milk and half and half thoroughly 
Add broccoli and simmer for 20 minutes till broccoli is soft
Purée soup in blender
Transfer back to pot and add cheese and chicken broth
Sprinkle in seasonings and taste to see if you like it




Serve with a little extra cheese and pepper on top
Goes great with bread sticks or a crusty baguette for dipping.
