Italian Chicken Sausage with sauted Veggies

I just read today that processed meats have been declared to dangerous for human consumption according to the World Cancer Research Fund. They have completed a detailed review of more than 7,000 clinical studies covering links between diet and cancer. Processed foods include sausage, bacon, hot dogs, sandwich meat, packages ham, pepperoni, salami, virtually all frozen red meats used for prepared foods. With this being said, I encourage everyone to read the labels and NOT buy anything with Sodium Nitrite in it. This is the ingredient used to dye the meat its red color and leads to an increase in cancer risk for those who choose to eat meats. Chicken is never red, so when in doubt just order the chicken :) Today I present you with this delicious and spicy Italian Chicken Sausage recipe.  


Ingredients:

mild chicken sausage
1 red bell pepper
1 green bell pepper
1 yellow or orange bell pepper
1/2 red onion
1 zucchini
1 Tablespoon minced garlic
2 Tablespoon olive oil
dash of pepper
dash of onion powder

Brown sausage in 1 Tablespoon of olive oil. Dice into coin sized pieces and continue cooking. Once finished set aside in a bowl. 
In the same skillet add the remaining tablespoon of olive oil, garlic, peppers and onion. Saute for 5 minutes. 
Sprinkle with salt and onion powder. Cover for 2 more minutes.
Add zucchini and sausage, mix, and cover for about 10 more minutes.

Note: You can eat as is or served with a side or quinoa.
