California Quinoa Salad

Do you want a light and refreshing, HEALTHY salad? Of course, we all do! Something I really love about this dish is that it's extremely easy to make and fairly cheap too. It also is even better as left overs because the flavor will just get better and better the longer it marinades. 


Ingredients:

2-3 cups of cooked quinoa
1 can of corn
1 can of black beans
1 chopped red bell pepper
1/4 diced red onion
1/2 cup salsa 
1 lime juiced
2 T chopped cilantro
Salt & pepper 

Mix everything together and place in fridge till ready to be served.
You can eat it as is or add some chicken. I like to add my Cilantro Sweet Chili Chicken.
